Black Truffle from Périgord (Tuber Melanosporum)

French Black Truffle

Season : November to March

The black truffle from Périgord (Tuber melanosporum), nicknamed the "black diamond of cuisine," is our most prestigious variety. It is an organic truffle.

Characteristics : Black warty skin, black flesh veined with white at maturity. Powerful and incomparable aroma reminiscent of damp undergrowth, earth, humus, and mushrooms. Texture that is both soft and crunchy, subtle and refined taste.

Usage : Perfect with eggs (omelet, scrambled), fresh pasta, risotto, game, fish, meats, and poultry. Gentle cooking recommended.

Black Truffles from the Southern Hemisphere

Season : June to August (when Europe is out of season)

Australian Truffle : Exceptional quality Melanosporum, cultivated in Australia. The same species as the truffle from Périgord, it offers identical aromatic characteristics during the Canadian summer.

Chilean Truffle : First quality Melanosporum from Chile. Allows us to supply our customers with fresh black truffles during the summer months.

Storage : In the refrigerator (2°C-5°C) in an airtight box with absorbent paper, to be changed daily.

AXYON Tip : Place fresh eggs in the box with the truffles. The aromas penetrate the porous shell and naturally flavor the eggs - perfect for your omelets!

White Truffle of Alba (Tuber Magnatum)

Season : October to December
Available in Toronto, Montreal, Vancouver, Quebec

The white truffle of Alba is one of the rarest and most precious truffles in the world. AXYON imports this exceptional truffle for the most demanding chefs and discerning gourmets in Canada.

Characteristics : Smooth skin of light ochre to yellowish beige color, marbled flesh of white and cream. Powerful and penetrating aroma reminiscent of fermented garlic, honey, and notes of aged cheese.

Usage: RAW - grated at the last moment on hot dishes: parmesan risotto, butter tagliatelle, fried eggs, fondue. Never cook.

Storage: Very delicate, quick consumption recommended (5-7 days maximum). Refrigerate at 2-5°C in an airtight container with absorbent paper changed daily.

Summer Truffle (Tuber Aestivum)

Season: May to August
Available in Toronto, Montreal, Vancouver, Quebec

Also called "Saint John's truffle," summer truffle is an affordable and delicious option to discover the world of truffles. AXYON imports this variety to supply Canadian restaurants and gourmets during the beautiful season.

Characteristics: Black and warty skin similar to melanosporum, but beige to light brown flesh heavily veined with white. Delicate aroma of fresh hazelnut, mushroom, and spring underbrush. Firm and crunchy texture.

Usage: Consumed very simply - freshly grated on a salad with olive oil and fleur de sel. Avoid heating to preserve its delicate aromas. Perfect for composed salads, carpaccios, cold pasta, appetizer toasts.

Storage: Already washed and ready to use. Keep in the refrigerator (2-5°C) for about a week in an airtight container with absorbent paper (to be changed every two days).

Note: Sometimes confused with "summer white truffle" due to its light flesh, it has no relation to the true white truffle of Alba.

Burgundy Truffle (Tuber Uncinatum)

Import France | Season: September to November

Burgundy truffle, a quality autumn variety, offers an excellent compromise between summer truffles and winter black truffles. Imported from France, it arrives just in time for the autumn gastronomic season.

Characteristics: More pronounced aroma than summer truffle, evoking roasted hazelnut, wild mushroom, and fallen leaves. Slightly darker flesh than aestivum with superior aromatic persistence.

Usage: Excellent in autumn preparations, pairs perfectly with game, free-range poultry, stews, and eggs. Supports short cooking times, making it a versatile ingredient for autumn cooking.

Recommended Preservation Method

  1. Gently remove the truffles from their packaging
  2. Place in an airtight box lined with absorbent paper
  3. Change the paper daily (or every 2 days for summer truffles)
  4. Store in the refrigerator between 2°C and 5°C
  5. Duration: 5-7 days for optimal quality (white truffle: consume quickly)

Chef's Tip

For truffle-infused eggs: Place whole fresh eggs in the airtight box with your truffles. The aromas naturally pass through the porous shell and flavor the eggs - ideal for extraordinary omelets and scrambled eggs!
