A trendy product for starry tables, bottarga is made from pockets of mullet eggs. Coming from fishing in the Mediterranean, our responsible fishermen focus on pure-water catching areas and patiently wait for the females to reach full maturity, in order to obtain "King Size" eggs. Their size allows us to obtain a bottarga with a smoother texture, close to candied fruit, and sweet bitter and iodized notes. Thanks to our slow-maturation process, we suggest you choose your texture and aromatic palette adapted to your taste.

Tasting at home

Take the bottarga out of its packaging 30 minutes before serving. Bottarga can be eaten cut or grated into thin slices. It cannot be cooked (at least, not in French / southern gastronomy), and is added to the dish when serving.
There are two ways to taste “plain” and cooked bottarga: plain: just sliced ​​and served on a toast of toast and buttered or cooked: added to the dish after dressing.
