La Spéciale Gillardeau is the flagship product of Maison Gillardeau, founded in 1898 at the foot of Oléron Island in Charente-Maritime. Raised for 3 to 4 years in marine beds selected for their natural richness (Ireland, France, and other terroirs), it grows to the rhythm of the tides and seasons, with a meat content higher than the legal minimum for special oysters (10.5%).
Instantly recognizable, each oyster is laser-engraved with the “G” logo on its lower shell—a signature applied since 2014, guaranteeing authenticity and quality while also protecting against counterfeiting.
Tasting characteristics: meaty and generous flesh, great aromatic finesse, and a persistent flavor on the palate, underpinned by a subtle hazelnut note.
Quality & traceability:
- E. coli and Salmonella testing on every incoming batch (more than 1,040 analyses per year)
- Systematic purification of all batches, including those from Class A areas, for 10 to 20 days depending on the season—5 to 10 times the legal duration
- Packed in PEFC-certified wooden oyster baskets and lids (poplar), with padding and a waterproof sheet to preserve moisture, and strapping to ensure the retention of water between the shells during transport
Storage: keep completely flat in their original oyster basket, between 5° and 8°C. Under these conditions, they can be kept for up to around ten days after packing.
