Pistachio pesto, watercress with saffron
Preparation: 15 min
Ingredients (for 2 people):
0.1 g saffron
1 bunch of watercress
2 tablespoons of pistachios
1/2 teaspoon of salt (if pistachios are salty, do not add salt)
zest of 1 lemon and 1 tbsp lemon juice
Infuse the saffron in the lemon juice.
Wash the watercress in plenty of water and drain.
Blend the pistachios with the saffron in a blender or grinder, then add all the other ingredients to the blender.
